Texas Caviar

(note:  this needs to marinate for a least 3 hours before serving)

Ingredients:

1 can Pinto beans (drained, don't rinse)
1 can black-eyed peas - plain (drained, don't rinse)
1 can sweet corn (drained, don't rinse)
1/2 medium onion - chopped
1 green pepper - chopped
1/4 cup fresh cilantro - chopped
1/4 teaspoon cayenne pepper (optional)
1/2 cup sugar
1/2 cup canola oil
1/4 cup white vinegar
1/4 cup apple cider vinegar

Directions:

Mix the sugar, oil and vinegar separately in a bowl.  In another bowl, mix the rest of the ingredients and then add the vinegar/oil dressing.  Put into a gallon size Ziploc bag (or you can leave it in the bowl and cover with plastic wrap).  Marinate in the fridge for at least 3 hours before serving.  Stir before serving.  Serve with tortilla chips or tortilla scoops for dipping.

Hint:  for extra flavor, add chopped pineapple or mango
